A lunch in byzantium - under the direction of Mistress Helewyse de Birkestad:
Only $5 per person

To drink - lemon barley water, ingredients: barley, lemons, sugar, water

Main course - chicken roasted with lemons and oregano.
Ingredients: chicken thighs, oregano, olive oil, salt, pepper, lemons.

Served with - flat bread and a choice of either:
1) Watermelon, feta and walnut salad
Ingredients - watermelon, feta, roasted walnuts
2) salad of cooked greens
Ingredients - blanched leafy greens, market variety may include: swiss chard, kale, collards, spinach. Dressed with olive oil, salt, pepper, vinegar.

Dessert - roasted apple and fig compote served with greek yogurt

La Merenda – A Venetian Lunch under the direction of Mistress Gianetta Andreini da Vicenza:
Only $5 per person

Fried millet polenta
Ingredients: Millet, commercial almond milk, butter, olive oil, salt

Choice of meats
Polpette -- Meatballs in broth
Ingredients: Pork, salt, pepper, cinnamon, ginger, saffron, fennel, mint, marjoram, egg, chicken broth, white wine vinegar

Osei scampai – Skewered beef with sage and bacon
Ingredients: Beef, salt, coriander, cinnamon, cloves, ginger, nutmeg, pepper, saffron, fresh sage, bacon

To taste:
Cisame – sweet and sour marinated whitefish
Ingredients: Hake, flour, onions, white wine, currants, olive oil, white wine vinegar, almonds, honey, salt, pepper, nutmeg, cloves

Choice of vegetables:
Verze sofegae – sautéed cabbage with garlic
Ingredients: Green cabbage, olive oil, garlic, salt, pepper

Insalata di Carote – Cooked carrot salad with vinegar and spices
Ingredients: Carrots, olive oil, white wine vinegar, salt, pepper, cinnamon, ginger, grape syrup

Ciambelloni – Sweet bagels
Ingredients: Flour, eggs, sugar, milk, orange flower water

To drink
Un Ombra di Vino: Reduced wine syrup
Ingredients: Moscat wine, sugar, orange peel, white pepper
